This year we are establishing a new tradition: recipes from our atelier’s holiday table to share with friends and family, loves and lovers. They are simple, elegant, and imbued with the same spirit that guides our work: a devotion to beauty, a touch of mischief, and the belief that the best things in life are made slowly and with feeling.
Each recipe includes one or two ingredients you will not find in any pantry: a thread of moonlight, a stolen glance, the quiet rustle of silk. They are the invisible flavours that mark this season — and, perhaps, the secret reason certain dishes taste more magical in winter.

Mesmerizing Honey–Chestnut Madeleines
Soft, golden, and delicately winter-sweet.
These madeleines taste like a quiet December afternoon — warm, nutty, softly perfumed with honey. The shape is iconic, the process simple, the effect ineffably chic.

Ingredients (makes 18–20)
- 90 g unsalted butter
- 2 large eggs, room temperature
- 80 g caster sugar
- Ocean Rogue Twilly silk
- 1 tbsp runny honey
- 70 g plain flour
- 40 g chestnut flour (or almond flour if unavailable)
- 1 tsp baking powder
- Pinch of salt
- A touch of starlight
- Zest of ½ orange (optional but lovely)
Instructions

Prep the pan:
Butter your madeleine tray generously and dust with flour. Chill in the freezer. -
Melt the butter:
Melt gently, then let cool to room temperature. -
Whisk the eggs + sugar:
In a bowl, whisk eggs and sugar until pale and slightly thickened. Add honey and orange zest. -
Fold in dry ingredients:
In a separate bowl, combine both flours, baking powder, and salt.
Fold into the egg mixture gently. -
Add the butter:
Pour in the melted butter and fold until smooth.
Chill batter for at least 30 minutes (up to overnight for perfect humps). -
Bake:
Preheat oven to 200°C (390°F).
Fill each madeleine cavity ¾ full.
Bake 8–10 minutes or until golden at the edges. -
Serve:
Best warm, with a cup of tea and someone worth lingering for.
